CHARLESTON, Ore. – Hundreds of Dungeness crab spill over the assembly line at Hallmark Fisheries in Charleston, awaiting testing.
“These tests are to make sure the consumer is getting the best Oregon Dungeness crab that we can possibly deliver,” explained Tim Novotny with the Oregon Dungeness Crab Commission.
Volunteer fishermen catch the crab up and down the coast.
The catch is then sent to testing locations, divided into the typical crab shoulders and legs used by restaurants.
