Angelo Ibleto Reins As Petaluma's Sausage Czar

With a warm smile and an energetic personality, Angelo Ibleto defies his own age.
The 82-year-old award-winning Petaluma-based sausage maker and smokehouse expert is dedicated to his craft – he typically rises between 5 and 5:30 a.m. to begin his day by either taking fish out of the smokehouse to make jerky or preparing to make sausages.
Ibleto, who owns Angelo’s Meats, is usually able to complete at least 300 sausages before his staff arrives at 9 a.m. and once he even outdid himself by making 800. He said he enjoys the opportunity to be creative and scheme up different delacicies.
“I love to do it because it’s a challenging business,” he said. “I want to improve what’s already good and come out with something else to follow up. It’s a challenge for me – it’s what makes me get up early in the morning. I just love it.”
