LITTLE ROCK — The shrinking U.S. catfish industry has reached the restaurant menu and table.
Distributors are rationing their supplies, forcing some restaurateurs to raise prices or drop the Southern favorite from the menu altogether.
Ken Lightfoot, co-owner of Catfish City and BBQ Grill in Little Rock, said if he hadn’t stocked up on catfish two months ago he’d be unable to serve it at his restaurant today.
“We got lucky,” Lightfoot said Wednesday. “We stocked up right before the shortage because we heard there was going to be [one]. But, we’ve been talking to [our distributors] every week and they’ve been telling us they don’thave any.
