Restaurants Change To Meet Demands Of Recession

Restaurateur Simpson Hughes sees a light at the end of the tunnel in his business — and it is not a train.

Despite the ongoing recession, customers are dining out and are expected to eat out just as much in 2010 as they did in 2009, although they plan on spending less money per meal.

To make the most of this trend, restaurants must focus on the basics: “Quality food at affordable prices with impeccable service,” said Hughes, co-owner of the recently opened Slim Skillets on Germantown Parkway in Cordova, as well as the Butcher Shop.

“To be successful, you must be flexible and willing to change and adapt — from adjusting the menu to lowering prices to offering special discounts,” Hughes said.
