Sanderson Farms is the fourth largest poultry producer in the United States, with capacity of just over 9 million head per week spread across the southern part of the country from Texas to North Carolina. The company saw a 21% pound processing increase in 2008 and is expecting to slowly expand capacity moving forward. Sanderson Farms' capacity is split evenly between Big Bird Deboning and Retail.

Big Bird Deboning refers to the processing of large chickens up to 8 pounds that produce boneless breast meat, chicken wings and dark meat for the export market. Big Bird Deboning is the most profitable sub segment of the chicken processing industry.
