From the perspective of the cheese lover, Wisconsin has long been known for commodity cheddars sold by age, not by brand.
Stores offered 3-year-old or 5-year-old Wisconsin cheddar, but shoppers never knew who made it. That marketing scheme might not seem peculiar until you ask yourself when you last saw a cheese labeled as "California Cheddar."
Like other states, Wisconsin is now experiencing a boom in artisan cheese making, which means that we are seeing more branded cheeses from that state. One of the recent arrivals, although still rare here, is Bleu Mont cheddar from Blue Mounds, Wis., just west of Madison.
