While the subject of conventional Southern foodstuffs commonly elicits cravings for R.C. Cola and MoonPies or Cheerwine and pork rinds, there's more to what the South has to offer.
One Southern staple that doesn't get the time in the spotlight it deserves is hoop cheese, or hoop cheddar.
For the unfamiliar: Hoop cheese is the vibrant yellow, wax rind cheese wrapped up beside the register at mom and pop stores throughout the South. Basically, it's just a mild cheddar. But, instead of being made into blocks like most cheddars, it's made into rounds, hence the name hoop cheese.
