Sauk County Cedar Grove Cheese Is Expanding To Milwaukee

Bob Wills is taking cheesemaking from the country to the city.
Wills, owner and operator of Cedar Grove Cheese near Plain in Sauk County, will be opening a cheese production facility in a new development on the south side of Milwaukee. Ground breaking is Thursday for the four-story development that will house the facility on the ground floor with clinic and office space above.
Clock Shadow Creamery will make cheese for the Milwaukee restaurant and grocery markets. It will also have a retail store.
“It’s something that really hasn’t been done,” Wills said. “Outside the Pike Place Market in Seattle, there really are no urban cheese production facilities in the country.”
