Rouses has started offering locally fished and flash-frozen drum, sheepshead and flounder at all of its Louisiana stores, and the chain’s leaders say about 80 percent of the fishermen it’s working with are from Terrebonne and Lafourche.
Rouses has been working on the idea of packaging its own Gulf fish for almost a year, according to James Breuhl, the store’s seafood director. Breuhl was waiting for a local processor to get the packaging equipment for the filets, which the store will offer year round.
“It takes a lot of time and effort to set this up, but it’s worth it,” said Breuhl.
Rouses launched the program under the Rouses label with Gulf fishermen in mind.
