New Orleans – For local seafood dealers, the oil spill is a moving target for more reasons than one. Oyster beds are closed in one area one day, open in another, and restaurant owners have to be more creative than ever to get a safe supply.
With oil now pushing up across the river delta, oyster sellers wonder where their supply will come from next. Oyster beds open, oyster beds close – but they keep coming in for those with solid suppliers.
“I don't believe it's going to stay open. I hope they stay open, but I don’t' believe it,” said oyster wholesaler Nick Bez.
For 25 years Bez has been harvesting and selling oysters out of Plaquemines Parish, and he has never seen anything like this.
