Unique new fish and shellfish products, along with the concepts of sustainability and food security, are selling like hot fish cakes at the International Boston Seafood Show.

Delegates from the Atlantic Canadian seafood industry are working at the three-day show to try to capitalize on the attendance of 19,000 buyers and sellers from over 120 countries.

The annual show, North America’s largest, offers a chance to watch for new industry trends, Louisbourg Seafoods Ltd. co-owner Lori Kennedy said during a Sunday afternoon conference call.

The show, which began Sunday, opens the door to international sales opportunities and has a strong educational component, Kennedy said.
