First Half-Shell Scallop Production Underway At Northern Lights Seafood
October 29, 2014 | 1 min to read
Processing of Newfoundland and Labrador’s first half-shell scallops is currently underway.
Employees at Northern Lights Seafood, in Main Brook, are currently preparing 1,600 pounds of local product, as a test product for potential buyers.
Unlike regular scallop processing, which is the white meat only and prepared by the harvester, the plant oversees the processing.
This involves halving the shells, leaving all contents within, cleaning and placing into 12-pound boxes. The uncooked scallops will then be air blast frozen.
