With the goal of involving all Peruvian restaurants in the area, the Trade Commission of Peru in New York launched the campaign: "Aji Amarillo shines here", a label that identifies establishments that offer delicious dishes prepared with this important ingredient of the Peruvian cuisine.                        

"Our goal is to have about 100 restaurants in New York and New Jersey to participate in this campaign to promote Aji Amarillo. So far we have over 70 affiliated restaurants," said Conrado Falco, Director of the Trade Commission of Peru in New York. "We will seek to list at least 200 restaurants of the entire tri-state area to launch a Peruvian Gastronomic guide," he said after visiting the city of Paterson, New Jersey, which has the largest concentration of Peruvians and Peruvian restaurants in the United States.

Restaurants have already joined to this initiative willful to highlight the authentic flavor and color of this special yellow pepper in classic dishes of Peruvian cuisine like Papa a la Huancaina and Aji de Gallina. Each restaurant is offering a special menu with these dishes considered staple dishes of the Peruvian cuisine.

The campaign was launched on Wednesday, March 25th and runs until April 12th, in order to promote "Aji Amarillo", considered a key product that provides color and taste to authentic Peruvian cuisine. During this period, Peruvian restaurants offer customers a special menu based on this 2 staple dishes: "Papa a la Huancaina" and "Aji de Gallina". The Aji Amarillo is a product grown in the highlands of Peru and marketed in the United States in various presentations as paste, frozen and canned.
