The U.S. Department of Agriculture (USDA) is revising the U.S. Standards for Grades of Cauliflower.
USDA is modifying the cauliflower standards to allow all colors, including mixed packs of color, to meet the requirements of the grade. In addition, the size requirement will be amended to permit curds smaller than 4 inches in diameter and marking requirements will be added for sizes specified smaller than 4 inches in diameter. The revision also removes the Unclassified Section. These changes will provide the industry more flexibility to meet growing consumer demands.
