PERRY — The revival of Wyoming County’s cheesemaking industry is quickly becoming a reality.
Construction continues to advance on the East Hill Creamery on Route 39. Its “cave” is complete and the building is rapidly taking shape.
“The equipment has been moved inside,” said Betty Burley, who’s working with her husband Gary to open the plant. “We’re waiting for the people from France to come over in November and install it, and help us set it up.”
That includes copper-lined cheese vats, pressing and molding tables, and brine tanks. As of this past May, the plant represented a $4 million investment.
