Smoked Success: Vermont Cheese Maker Flavors With Applewood

It’s no secret that most people love cheese, be it cheddar, feta, blue or any of the other thousands of varieties out there. When you smoke it, however, you bring the flavor to a whole other level.
For the last three years or so, Bousquet Smokehouse, out of Westminster, Vt., has been producing and selling their own smoked Vermont cheddar, infused with the sweet flavor of local applewood.
“I’ve been doing this full-time since May,” said Brian Bousquet, who operates the smokehouse along with his wife, Diane. “I was a cheese maker for Vermont Shepherd, which makes sheep cheese right here in Westminster.
