Getting Patriotic About Cheese

“This will be fun,” says Kathy Guidi when asked to design a Canadian artisanal cheese plate for Anthony Bourdain. “I know nothing about him except that he loves to travel, which is why I thought Canadian cheese will be like a souvenir for him.”

Guidi , author of Canadian Cheese: A Pocket Guide, runs the Cheese Education Guild in Toronto.

She suggests meeting at Nancy’s Cheese (260 Dupont St.) because owner Nancy Peppler gives cheese lovers “more bang for their cheese buck.”

Peppler offers quality over quantity, lets you taste before you buy, cuts cheese to order, tapes tasting notes onto each purchase, and keeps a file on the favourite cheeses of regular customers.

“I also think people need to know that they should buy cheese like produce . . . because cheese — like produce — is alive and is best when bought fresh.,” says Guidi.
