Columbus Foods Adds To Extensive Bulk Collection

HAYWARD, Calif. — Columbus Foods, makers of premium specialty meats for more than 95 years, has introduced molded Hot Sopressata salame to its behind-the-counter deli selection. The product adds to the brand’s portfolio of more than 40 bulk and packaged salumi offerings.

Naturally aged for 50 days, Columbus’ molded Hot Sopresata is coarsely chopped, with chile de arbol, fennel, and sherry wine. The salame features a distinctive spicy flavor of peppers and fennel, which is enhanced by its outer layer of Fiore. Fiore is a soft white coating of aromatic mold that protects the meat from excessive drying and heightens flavor, much like the rind on Brie cheese.

Previously only available in individual 8 oz. sizes, molded Hot Sopressata will now be available for at the deli department sliced to order along with Columbus’ full range of bulk deli products. It has an SRP of $12.99 – $14.99 per pound and will be available in the deli at select grocery and specialty stores beginning in September. Like all Columbus Foods salame, it is authentically made with 100% pork and is gluten free, containing no MSG or trans fats.
