MENOMONIE — A goat cheese processing plant got a needed special exception permit from the Dunn County Board of Adjustment on Wednesday.
Bifrost Farms Creamery, E2062 930th Ave., Boyceville, owned by Meg Wittenmyer, required a special exception permit to operate the processing plant in the agricultural district. The micro-processing plant started processing cheese about three weeks ago.
In information provided to the board, Wittenmyer said she will have about 16 to 20 milking does on about 20 acres, which is the most she plans to expand. Goat cheese is made in an already existing 11-foot by 40-foot building on the property. She has had dairy goats for about five years.
“It (will) facilitate the growing interest in local foods and produce,” Wittenmyer said.
