Bellwether Farms cheesemaker Liam Callahan traces the inspiration for his popular Carmody to a tour of an Italian Gorgonzola plant 15 years ago.
The Gorgonzola wheels were aging off site, but the Italians pulled out another cheese for their California visitors to try, a young table cheese with a fresh, milky flavor. It was a pleasant, everyday cheese meant for local consumption, the kind that Italians often call simply "toma" or "tuma," with the name of the village attached.
