If cookies go hand in hand at Christmas, then Easter is the time for sweet
breads and buns.
Hot cross buns are one of the holiday’s best known treats. At Amy’s Bread, which
has three retail locations in New York, the currant-filled rolls are slightly
sweet, mildly spicy, and richly tender, with a blend of milk and eggs.
Owner Amy Scherber says these buns, in the pre-Christian era, were served to
honor the goddess of spring. But later, a cross was carved in the top to
symbolize Christianity.
Hot cross buns, which are scored on top with a knife or kitchen shears and piped
with white icing in the shape of a cross, are traditionally sold in England on
Good Friday. Yet many bakeries begin making them even earlier as special treats
for customers.
