Just in time for autumn and the holiday season, a Westchester County bakery is bulking up its production capabilities with a mammoth commercial kitchen.
By the Way, a beloved gluten- and dairy-free bake shop based in Hastings-on-Hudson, will move all of its pots, pans and pecans to a new 7,000-square-foot commissary at 99 Castleton St. in Pleasantville next week. The original Hastings location will remain open.
“Construction has been on a tight timeline,” said By the Way founder Helene Godin, noting that the goal was to be operating in time for Rosh Hashana. “In addition to being gluten-free and dairy-free, everything we make is certified kosher. Last year we couldn’t even begin to meet the demand for our challah. This year, we want to have BTW challahs on as many holiday tables as possible.”
