LaClare Farms To Host Special Cheese Professional Day At Grand Opening Of Farmstead Dairy

PIPE, Wis. – The owners of LaClare Farms, maker of U.S. Championship Evalon goat's milk cheese, will host a special grand opening for cheese industry professionals at its new farmstead dairy facility on Monday, Nov. 4.
Located at W2994 County Road HH, east of the intersection of Highway 151 in tiny Pipe, Wis., the state-of-the-art, 35,000 sq. ft. facility includes a dairy plant, retail store and café, as well as a milking parlor with housing for 600 milking goats.
Owned by Larry and Clara Hedrich and their family, the new farmstead dairy plant allows daughter Katie Hedrich, the 2011 U.S. Champion Cheesemaker, to expand the current offering of LaClare Farms goat’s milk and mixed milk cheeses, including Evalon, Fresh Chevre, Cheddar, Fondy Jack and an array of American Originals. A new cheese is slated to be unveiled to industry professionals on Nov. 4.
Facility tours, chef demos, as well as seminars on cheeemaking and goat dairying will be offered from 10 a.m. to 7 p.m. The event is free, but professionals should RSVP to make sure enough materials are available. Email or call Greg Hedrich at greg@laclarefarms.com or 920-670-0051 to register.
The LaClare Farms dairy plant is capable of processing cow, goat and sheep milk products, including cheese, cultured products and bottled milk. In addition to crafting their own LaClare Farms products, the Hedrichs perform custom processing and aging, and work with beginning dairy entrepreneurs to develop new products.
