Each bean is gently harvested, taking care to avoid damaging the plant, so it can generate additional crops of beans. The Carmellini® bean is an especially interesting veggie to harvest, as its size is comparable to a thick piece of dental floss. It takes 3-4 hours to harvest just one pound of these miniature beans. “We couldn’t believe a chef would consider buying a bean so immature, but the tenderness and flavor was just what Chef Andrew Carmellini wanted, so we named the bean after him!” said Farmer Lee Jones, co-owner of The Chef’s Garden.
