EVERY last bakery, pizza shop, and bagel joint in one US state is bracing for a major flour ban poised to disrupt bakers.

Under a new bill, they would no longer be permitted to use bromated flour – a staple ingredient known to strengthen dough, improve rise, speed up mixing and baking times, and create desired textures in baked goods.

Recently passed by New York state legislators, the Food Safety and Chemical Disclosure Act is aimed at banning the manufacture, sale, and use of potassium bromate in breads and baked items, an oxidizing agent also known as dough conditioner.

The goal of the bill is to enhance consumer safety, as the chemical compound has been restricted or banned in Canada, China, parts of Europe, California, and other areas due to its links to cancer in its unbaked form.
