Austrian startup Revo Foods presents Minced Fungi Protein, a high-protein, low-calorie alternative sourced from mycoprotein derived from the Fusarium venenatum fungus. This innovative product consists of only four natural ingredients, offering complete amino acids and excellent digestibility without the processing drawbacks of traditional plant-based proteins. With nearly 25 grams of protein per 160g pack, it’s designed for health-conscious consumers seeking flavorful, versatile options that support fitness and sustainability.
Vienna – Protein continues to take center stage for consumers — not just for athletes, but for anyone seeking a healthier, performance-focused lifestyle. With the launch of Minced Fungi Protein, Austrian foodtech startup Revo Foods introduces a new kind of protein product: high in protein, low in calories, and made from only four natural ingredients. Unlike many protein products currently on the market — which rely on animal sources or plant-based proteins with certain disadvantages — Minced Fungi Protein offers a clean-label, nutrient-dense alternative based on fermented mycoprotein.
The protein trend evolves
Protein-rich products are no longer a niche for bodybuilders — they’ve become a driving force in mainstream consumer demand. “High protein” claims now feature across everything from yogurts to frozen meals, and the category continues to show strong growth in supermarkets worldwide.
But consumers are increasingly looking beyond just quantity. Today’s focus is on natural, functional protein sources that are minimally processed and aligned with health and sustainability goals. In this context, animal proteins — particularly red meat, with its links to cholesterol and saturated fats — are not ideal for a large sub-segment of consumer.
Still, many plant-based protein options fall short. Tofu, soy granulate, or pea protein often lack a complete amino acid profile, bioavailability or require extensive processing. This is where Minced Fungi Protein sets a new standard: a naturally fermented protein product that delivers clean nutrition, excellent bioavailability, and everyday usability — without unnecessary ingredients.
Mycoprotein as a nutritional powerhouse
The core ingredient in Minced Fungi Protein is mycoprotein derived from Fusarium venenatum, a fungus discovered in the UK during the 1970s as part of a government research project searching for sustainable food sources. Among more than 3,000 organisms screened, this strain stood out for its nutritional completeness and rapid, efficient growth.
Mycoprotein contains all nine essential amino acids, boasts one of the highest digestibility scores (PDCAAS) among proteins (higher than chicken or beef), and is naturally high in fiber. It’s produced through a gentle fermentation process — similar to beer brewing — where the fungus converts sugar into protein-rich biomass. Unlike soy or pea protein, no extraction, heat, or high-pressure treatments are required, preserving its full nutrient profile and making it usable as a primary ingredient in its whole-food form. The Minced Fungi Protein of Revo Foods is made from only four ingredients: mycoprotein, rapeseed protein, canola oil, and a blend of sea salt and herbs for convenient culinary use. It holds Nutri-Score rating “A” and is tailored for health-conscious consumers with active lifestyles.
Each 160 g pack contains nearly 25 g of protein, with just 137 kcal per 100 g. Only 0.7 g carbs and 1.3 g saturated fat per 100g make the Minced Fungi Protein an ideal food for gaining muscle and losing fat. It outperforms many traditional protein sources — including beef, tofu, eggs, and lentils — in terms of protein per calorie, while keeping fat content significantly lower.
„We wanted to create an easy-to-use protein for a new generation of fitness-oriented consumers. Animal proteins have a disadvantage of cholesterol/saturated fats, while plant-based proteins have a disadvantage with bioavailability and amino acid composition. Fungi Protein opens up a third category of proteins: Bioavailable, a complete amino acid profile and without the need for processing. Plus, it tastes awesome and can be basically added to any meal as an additional protein input. We see this as the future of sport nutrition“ – Robin Simsa, CEO of Revo Foods
Not a meat alternative — a new category
While many plant-based products attempt to replicate animal-based foods, the Minced Fungi Protein belongs to a growing segment of products that stand on their own. It’s not trying to replace meat — it’s offering something entirely different: a clean, functional, and versatile protein base.
Its mild umami flavor and light, crumbly texture make it ideal for a wide range of dishes — from bolognese to curries, tacos, or protein bowls. It absorbs sauces and spices well and cooks in just minutes in a pan, oven, or air fryer.
The Minced Fungi Protein will be available from July 16, 2025, in the Revo Online Shop, BILLA Online, BILLA Pflanzilla, and KOKKU (Germany).
