Maple Leaf Farms Launches Heritage Product Line

Heritage products offer superior skin, fat and meat quality for Head on, Feet On markets

LEESBURG, Ind. – Maple Leaf Farms announced the launch of a Heritage product line under its Woodland Farms brand. Created to distinguish the ducks specially bred and fed for the company’s head on, feet on (HOFO) business, the Heritage line features Confucian style and Buddhist style HOFO products with the flavor, texture, and composition to yield dishes with crispy skin and succulent meat.

“With our new Heritage line, we are committed to delivering head on, feet on ducks that are perfect for traditional Asian roasting methods,” said Director of Marketing Olivia Tucker Ruddell. “The Heritage strain yields a completely different duck than any other strain produced at Maple Leaf Farms, especially related to fat composition. The Heritage strain has up to 20% more fat than a typical Maple Leaf Farms duck, resulting in excellent performance in high temperature roasting ovens and superior skin appearance.”

The company is offering both Confucian and Buddhist style head on, feet on (HOFO) ducks through the Heritage line. Heritage Confucian Style ducks are non-eviscerated with head and feet still attached following processing. The brand’s Buddhist Style ducks are eviscerated, head on, feet on ducks. Both styles are minimally processed, all -natural ducks that are carefully examined for high skin quality and ideal for traditional Asian cooking methods. The Heritage line also offers whole ducks without the neck and giblets.

“Ducks grown for the Heritage line are bred and fed to have superior meat, fat and skin quality,” said Ruddell. “They are processed with particular care to meet our customers demand.”
