Cookies To Crave: Main Street Cookie Company Of Rainier

The cookie that started Joycelyn Zambuto’s baking aspirations is a mouthful to recite and a mouthful to eat.
It would be quicker to say “chocolate chunk pecan,” but Zambuto takes no shortcuts whether she’s baking her flagship cookie or repeating its lengthy name: Chocolate Chunk Toasted Pecan with a Trace of Coconut.
At the Main Street Cookie Company in Thurston County, Zambuto’s staff toasts the walnuts and pecans that add the crunch to some of their cookie varieties. They use only sweet cream butter, not hydrogenated shortening. They squeeze fresh lemons to get the juice for their Lemon-Iced Butter Cookies.
“What makes the cookies special is that everything here is whole food,” Zambuto said.
