Americans just can’t quit bacon. In fact, for the 12-month period ending April 2014, they ate 1.1 billion servings of bacon, a six percent increase from the previous year, reported the NPD Group. Moreover, consumer bacon consumption rose in spite of the fact that sliced bacon prices were up 18.8 percent to $6.05 a pound, according to the Bureau of Labor Statistics.
So what is the key to bacon’s enduring popularity? Perhaps, its inherent tastiness and knack for reinvention, which can take it from being a breakfast staple to a milkshake to popcorn.
“Bacon has broad appeal, and there is little risk in trying a new dish or item,” says Harry Balzer, chief industry analyst and vice president, NPD Group, based in Port Washington, N.Y. “Over 40 percent of Americans consume bacon, so if even 10 percent of that group try a new product, that is still good.”
