'Uncertainty' Keeps Rush Creek Reserve Off The Shelf This Year

A cheese that has been the star of many holiday tables will be out of the spotlight this year after its maker chose to cancel production because of uncertainty in federal regulations.

Rush Creek Reserve, a soft, creamy raw-milk cheese made by Uplands Cheese Company of Dodgeville, won’t be coming to the market this fall in what would have been its fifth season of production.

“This is the time of year when we start collecting pre-orders from customers,” said Andy Hatch, who makes the cheese as well as Uplands’ signature Pleasant Ridge Reserve. “We were getting a lot of calls and emails of people wanting to get on the list and I had to just say, ‘There is no list.’”
