Jonathan Dugas said the wild oysters his firm grows in the bay near Caraquet have a flavour unlike any other in the world.
The sales manager for Ferme Ostricole Dugas Lte hopes the oysters he’ll be bringing with him on a trade mission to New Orleans and Houston next week will land him new clients in the southern U.S. cities.
“The taste of it is unique to this region because of the bay and the mix of the two rivers that are flowing in the bay,” Dugas said of the oyster variety – called caraquette after the town.
“It’s a unique taste for oysters. It’s a bit salty but not too much – just a little taste of the ocean.”
