If your routine is just broil/bake/fry the salmon/halibut/snapper, it’s time to freshen up your table with some fresh-as-can-be fish from your own backyard.
Idaho produces about three-quarters of the trout bought in the U.S., and almost all of that is grown right along the Snake River in Twin Falls County. There are about half a dozen fish producers in this area, growing all that trout, plus catfish, tilapia, sturgeon and other species.
Among the producers is Leo Ray, owner of Fish Processors and Breeders of Idaho, who will talk about some of the details of his operation at a seminar north of Hailey on Thursday.
“We’ll explain to people why the product is as good as it is,” Ray said. “The trout in this valley, pricewise, is one of the best buys in any kind of seafood, for the quality of fish.”
