Wells, Maine – Noted entrepreneur, educator and seafood expert Dr. James E. Griffin of Johnson & Wales University will present, “The Looming Seafood Information Crisis: Sustainability vs. Supply Chain Complexity in Seafood,” at FirstSource Events’ 6th annual Seafood 1on1 buyer-supplier exchange at the Hotel Providence in Providence, RI, June 15-17.
Dr. Griffin is the former president and CEO of Coolfish, a Division of Slate Gorton & Co. He currently is an Associate Professor at Johnson & Wales University and is a culinary consultant, serving institutions and organizations both domestically and internationally. A serial entrepreneur, he has owned and managed several foodservice related businesses and restaurants and is certified as an executive chef (C.E.C.) and culinary educator (C.C.E.)
Dr. Griffin will share findings from a recent national study of seafood sustainability in commercial foodservice that suggests chefs rely more than ever on their suppliers to assure that the seafood they purchase is sustainable. His presentation will focus on the root cause for this behavior and what it means in both foodservice and retail channels. During this interactive, data-driven presentation, attendees will:
- Learn about the key terminology chefs associate with seafood sustainability
- Understand the country of origin (COO) preferences chefs report when procuring seafood
- Discover the reasons why chefs rely on vendors for seafood sustainability information and assurance
Other presentation highlights include interactive panel discussions with restauranteurs and retailers who need to ensure that their supplier’s sustainability claims are valid; Getting consumers excited about selling lesser known, under-utilized fish along with a Buyers Roundtable Discussion, moderated by Phil Gibson, Encore Associates, on the important topics of the day. In addition, John Fiorillo, Editor, Seafood International, will kick off the conference agenda by sharing the Consumer and Industry Trends that are shaping seafood sourcing in the near future.
