Toasting an American beverage tradition, Chicago bartender, mixologist and blogger Todd Appel gave his refreshing Auckland Summer Punch a New Zealand spin. Appel’s recipe, which showcases ZESPRI GREEN Kiwifruit and Square One Cucumber Vodka, is easy to batch in pitchers for serving a crowd of thirsty patrons. He balances the flavor with Sauvignon Blanc, dry sake and fresh lemon juice. For batching, Appel juices the kiwifruit to ensure an intense color and to avoid crushing the seeds. He adjusts for the sweetness of the kiwifruit with simple syrup.
