Salinas resident Ed Vargas has been involved in produce and food quality control and safety since he worked as a produce inspector over 14 years ago. Eventually he started his own company, Food Safety Sampling, and has expanded it to include offices in Salinas and Yuma, Ariz.

Vargas’ father worked for many years for Hansen Farms and Edgar followed him into the produce business when he left school. The young man began with Food Source and he became involved with produce inspection and quality control. Eventually that role expanded to include overseeing the logistics of moving the produce to the retailer.

As an offshoot of this, Vargas moved into the laboratory testing of produce when produce safety became an issue after a number of major recalls because of tainted products.
