“It’s going to be a strong season”, said Richard Leibowitz, president of Culinary Specialty Produce in Mountainside, New Jersey. “The crop is looking great and we will have greater yield this year.  We still have to weave through the thorns to get them, but they are bursting with flavor and ready to pick.”

Fingerlimes are catching on everywhere. Consumer demand is up and Culinary Specialty has a pack to fit every need. “We still maintain the lowest cost per pack” said Mr. Mark Pittenger program manager and vice-president of sales for Culinary. “We know this item is more than a novelty but we still have to create a product that is affordable enough for the first time buyer. Only a very small demographic is willing to spend over twenty dollars to try a new product, and we a looking for a broader reach.”  Mr. Pittenger indicated that the three major chains they are now supplying are quite pleased with this very affordable “single serve” pack.

Culinary offers Fingerlimes for retailers in 8 count single serve, 2 ounce, 4 ounce, 8 ounce, and ½ dry pint containers. The single serve is packed in a 6/8 count clamshell case with a QR code linked to a recipe file. There are 16 cases in a master shipper, but they can accommodate any amount.  Culinary can deliver anywhere in the continental United States.

“Fingerlimes are also very popular with food service.” Mr. Pittenger continued, “We regularly get requests from restaurant chefs, bakeries, seafood companies and caterers. We pack half pound and one pound cases for these segments as well.”

Fingerlimes, often called caviar limes, are a long thin citrus fruit that can be cut length wise or in circles.  Either way, they reveal vesicles that contain a wonderful lemon-lime juice that is sweet/tart enough to eat on its own.  From simple preparation in ice-cubes to ceviche with beluga, the Fingerlime will add beauty and flavor to any salad, pastry, seafood dish, guacamole or margarita.
