U.S. Secretary of Agriculture Tom Vilsack said during a visit to Des Moines on Friday that he “welcomes the fact that folks are joining us” in defending the use of beef trimmings.
“This is a safe product,” Vilsack said a day after 20 U.S. representatives signed a letter asking what steps the USDA has taken to educate the public about the safety of lean, finely textured beef, which picked up the moniker “pink slime” in media reports. The group included three Iowans, Democrat Leonard Boswell and Republicans Tom Latham and Steve King.
“There are already indications that the attacks on LFTB will cause the price of beef to rise across the nation,” the bipartisan group of lawmakers said in a letter sent to Vilsack.
