Howard Bender, who has been developing a new beef bacon product called Schmacon, has been a busy man lately.
The product, which will be available on a retail level in 12-ounce packages in August or September in Hy-Vee and Kroger stores as well as possibly other grocery stores, is rolling off the manufacturing floors as the chef and Chicago deli owner begins the first phase of the product rollout to the food service industry, including hotels, restaurants, college campuses and health-care institutions.
The line of smoked and cured glazed beef slices is first being carried by Cisco, the nation’s largest food service distributor, although Bender is in talks with multiple other distributors around the country.
