"Look for a leaner, better quality sausage, sourced locally at farmers markets, to take on the role as the 'new bacon,'" proclaims the Food Network. "Home butchery and the charcuterie trend that has led to renewed interest in cured meats are additional factors here, as well."
Thanks to the great taste, versatility and value of sausage, both professional chefs and home cooks are experimenting more with this perennial pork favorite, says Pamela Johnson, director of consumer communications for the Pork Checkoff. "Sausage isn't just for breakfast anymore, and it's not just a pizza topping or center-of-the-plate item, either. From jambalaya to soups to salads, people are finding many new ways to incorporate sausage as an ingredient and add a punch of flavor to their meals."
