"We are encouraging consumers to reconsider pork as a meal option, especially since research proves that pork tenderloin is as lean as skinless chicken breast," says Matt Novitzke, associate brand manager at Cargill, who notes that cuts of pork from the loin are the leanest pork options available.
Ounce-for-ounce, pork tenderloin is as lean as skinless chicken breast, and meets the U.S. Department of Agriculture's (USDA) guidelines for "extra lean," according to the Pork Checkoff, which notes that today's most popular cuts of pork have 16 percent less total fat and 27 percent less saturated fat than they did 20 years ago according to the U.S. Department of Agriculture, Agriculture Research Service.
