Live cattle walk in one end of the plant, and individually wrapped steaks to be shipped straight to consumers come out the other.

With an investment in new packaging technology that keeps refrigerated beef fresh for 30 days, Greater Omaha Packing has launched a service that ships premium cuts of beef directly to people waiting to throw it on a cast iron pan, bypassing other processors, retailers and restaurants and avoiding ever freezing the meat.

The new product, called TenderAge, isn’t meant to take the place of the longtime South Omaha packing plant’s big business as a commercial beef supplier.

It’s a way to carve out a new niche, selling some of the plant’s highest-quality beef to the type of consumer who orders online and is willing to pay high prices — think $45 a pound for ribeyes and up to $80 a pound for filets.
