WMMB Puts Emphasis On Specialty Cheese

MADISON — Wisconsin is the nation’s leader in specialty cheese production, but that doesn’t necessarily translate into recognition of those products by consumers in the grocery store.

In a June 20 report to Wisconsin Milk Marketing Board directors, representatives of a firm that conducted consumer focus group studies for the organization said specialty cheese represents a big opportunity for the Wisconsin dairy industry, but most consumers don’t realize how special that cheese really is.

Scott Towan and Emily Reed, who conducted focus group sessions in New York, California, Tennessee, Wisconsin and Oregon, said the conversations with consumers indicated that recognition of the Wisconsin cheese brand is weak. Many consumers don’t realize that Wisconsin cheese compares favorably to cheese made around the world.
