SOUTH WOODSTOCK, Vt. – Vermont Farmstead Cheese Company (VFCC) introduces two new additions to its award-winning lineup of artisanal cheese, savory Sage WindsorDale and tangy Windsor Blue.
Formed four years ago, VFCC began as Vermont’s first community-owned dairy farm and is now a fast-growing purveyor of an entirely new generation of unique farmstead and artisanal cheeses. To date, VFCC has been awarded 33 industry honors in national and international competitions.
“We pride ourselves on the creativity of our cheesemakers, mixing Old-World techniques and new twists to come up with something truly unique,” says VFCC Head Cheesemaker Rick Woods. “The positive feedback and recognition we’ve received has allowed us to provide our customers with even more options, such as the Windsor Blue and Sage WindsorDale.”
To create the new Sage WindsorDale, savory sage leaves and oil of the herb are added to the firm, flaky WindsorDale, a VFCC raw-milk cheese aged six months and then double-milled. The sweet and savory notes of the cheese come from the fusion of sage and the WindsorDale’s honeyed aftertaste with a hint of tart apple. The Sage WindsorDale has smooth tangy characteristics that pair with everything from fresh fruits and vegetables to poultry dishes, making it a bold addition to any meal.
The Windsor Blue is made with Gorgonzola brought in from the heart of the Midwest. The piquant tang combines with the citrus sweet note in the WindsorDale for a unique combination that enhances both flavors. The crumbly, supple flavors make a great addition to any salad or steak. Paired with chutney or jam, the Windsor Blue makes for an excellent cracker topping.
