New packaging
New packaging for the “Vacche Rosse” has been rolled out in the last months. The black aluminium pack has a red cow picture on it together with the new “Vacche Rosse” approved mark.
In keeping the fragrance and the cheese’s organoleptic characteristics, the packaging will help consumers to better identify the packed cheese preventing them from misleading communication and frauds.
Anti-falsification measures
AnaBoRaRe confirms that since Jan. 1, 2010, the ENTIRE production of Vacche Rosse has been marked with the new approved symbol.
The new symbol represents an improvement being better identifiable and providing consumers and buyers new means to certify the original Parmigiano Reggiano delle "Vacche Rosse". The words "vacche rosse" will provide greater assurance to consumers and help in avoiding mystifications.
The mark is applied on both plates of the wheel, the inscription is radiating from the center and will be seen even if the product is cutted in small pieces. The mark is affixed only after 24 months of seasoning therefore it IS NOT possible to find a less seasoned cheese on the market.
This is just an additional security measure along with the existing tracking system that, given the unique number of casein affixed on each wheel, can provide any information regarding the wheel, the dairy farm, the day of production, the livestock and the cows which has produced the milk (more).
Last but not least, AnaBoRaRe has created a bullet proof system based on DNA analysis in order to control the originality of the "Vacche Rosse". A sampling campaign is running through shops all over the world fighting counterfeiter and protecting the consumers.
