The Ultimate Cheese Education Course Now Available Online

Madison, Wis. – Straight from America’s Dairyland, the Wisconsin Milk Marketing Board(WMMB) releases its newly updated Cheesecyclopedia®, a free online self-study course on Wisconsin cheese varieties and how to profit from an investment in Wisconsin cheese.

Developed for retail and foodservice professionals, the new edition of Cheesecyclopedia follows the Wisconsin cheesemaking process from pasture to plate. In addition, it provides:
• The latest insights on merchandising and menuing cheese.
• The basics of proper cheese storage and handling practices.
• Delicious recipe and pairing ideas.
• Updated information on the newest and most unique cheese varieties such as raclette, ricotta salata and crescenza-stracchino.

WMMB’s Cheesecyclopedia is accredited by the American Culinary Federation (ACF), enabling foodservice professionals who complete the program to earn two continuing education hours (CEH). Eighty CEHs are required to maintain ACF certification.
