San Francisco, CA – Real Food Company, a San Francisco natural foods grocery store, is offering a cheese class called the Great Washed-Rind on Tuesday, June 21st from 7 to 8:30 pm. Anne Rush of Restaurant Gary Danko will teach the class at the Real Food Company location on 3060 Fillmore Street.
“For the taste adventurer, we will explore the heritages and flavor-profiles of 5 spectacular representations of this specialized category. Annie will review the inception of washed-rind cheeses and the socio-political effect on them,” says Stephanie Trinidad of Real Food Company. “Taste and learn why Real Foodies appreciate these unique cheeses!”
The cheese class will feature cheeses from around the world. The tentative list of cheese profiles to be explored are a Chimay Grand Cru, Cowgirl Creamery’s Red Hawk, Nicasio Square ( a Taleggio-style cheese), Taleggio, and Epoisses.
For those who consider extra-sharp cheddar to be adventurous, this class offers a gentle introduction to more complex cheeses, such as Cowgirl Creamery’s Red Hawk, a triple-cream, washed-rind, fully-flavored cheese made from organic cows’ milk from the Straus Family Dairy. Aged four weeks and washed with a brine solution that tints the rind a sunset red-orange, this delicious local cheese won “Best of Show” at the American Cheese Society's Annual Conference in 2003 and a Gold Ribbon and second “Best of Show” in 2009.
San Franciscans are invited to move beyond the boring run-of-the-mill cheeses at home in the fridge and join Anne Rush this summer in exploring the exciting, aromatic world of classic washed-rind cheeses.
