Once a novelty, rotisserie chickens are now standard supermarket fare, typically packed into heated cases at the front of the store. While it’s easy to grab a hot chicken wherever you happen to be, it’s important to know that rotisserie chickens are not all the same.
Great rotisserie chicken starts with top quality, organic chicken. When that chicken is minimally seasoned and roasted just until done, it’s fall-off-the-bone tender and so tasty, it’s hard to stop eating. Lesser chickens are inferior every which way: They can be big and tough, over-seasoned, under-cooked or bone dry from hours on a warming table.
