The French dairy cooperative Onetik tends to make approachable cheeses with broad appeal, such as the buttery sheep's milk Bleu des Basques and mixed-milk Pilota.
A new Bay Area arrival from Onetik, the goat's milk Chabrin, certainly fits that description. Who doesn't enjoy cheese this smooth, sweet and mellow?
