When Della Williams talks about local flavor, she means it quite literally.
"I just fashioned one of the best goat cheeses I've ever had. It's very work intensive, but it has a real local flora," she said. "It's the kind of thing they do in France, where they just let the mold grow on it. It has the flavor of the area."
She and the others at SleepyGoat Farm in Pelham have been working on the cheese for eight months.
"It's pleasing to see that we have this bacteria here that takes up residence on the cheese," she said. "This yellow rind is native, so it has a very distinct flavor. It's really for people who eat a lot of cheese, I think… it's not a cheddar. What pleases me is that yellow rind, because that's Caswell County. That's where we live and what it will do."
