Rush Creek Reserve, the seasonal, raw-milk cheese made by Uplands Cheese Co. of Dodgeville, is back in production this year and will be released in November.
Uplands drew national attention when co-owner Andy Hatch announced to distributors that he would not produce the popular cheese in fall 2014 because of uncertainty over U.S. Federal Drug Administration guidelines for raw milk cheeses.
Rush Creek Reserve, a soft, silky cheese with a washed rind, is produced only in the fall, when Uplands cows switch from eating pasture grass to hay and their milk is richer.
